Heat Exchange

A heat exchanger (HX) espresso machine utilizes a single boiler kept at steam temperature (~250°F) with a metal tube running through it to heat the brewing water. When you start a shot, fresh water pumps through this internal tube, absorbing heat from the surrounding steam boiler on its way to the coffee puck. The Core Boiler: The primary boiler is filled partially with water and partially with steam, held at high temperatures optimized specifically for frothing milk.
The Exchange Tube: A copper or stainless steel tube passes directly through the center of this super-heated boiler without letting the water mix.
Flash Heating: Cold water from your reservoir is pumped through the internal tube. It rapidly absorbs thermal energy from the outer boiler, instantly hitting ideal coffee brewing temperatures.
The Cooling Flush: Because the water inside the tube sits idle between shots, it can become overheated. Baristas must run a brief 3-second water flush through the group head right before pulling a shot to clear out this overheated water.Key Benefits
